Aroma’s: In de wijn vinden we geuren van aardbeien, lychees, abrikozen en perzik.
Smaak: In de mond licht parelend en een mooie zachte zoetgraad.
Food pairing: Mooi in combinatie bij desserts waar perzik, aardbei,framboos, citroen en sinasappel in verwerkt is. Ook bij roomkoek en kletskop. Een scheut Moscato over het ijs doen of om Sabayon te maken.
Vinificatie: Deze Moscato wordt gemaakt door een zekere hoeveelheid van de natuurlijke druivensuikers te behouden.Het gistingsproces wordt afgebroken voordat alle suikers in alcohol zijn omgezet. Het gisten stopt vanzelf, omdat de wijn zoveel alcohol bevat dat de gistcellen hun werking verliezen. Na het kneuzen van de druiven wordt de most bij een lage temperatuur bewaard tot hij aan bottelen toe is. De gisting wordt dan door de wijnmaker op gang gebracht door de temperatuur te verhogen en gaat door tot de wijn de vereiste sterkte heeft zo´n 8%vol. Vervolgens wordt de wijn tot 0°C. afgekoeld en wordt de gist uit de wijn gefiltreerd. Aansluitend volgt de 2de gisting op fles, waardoor hij zijn mooie zachte bubbel krijgt.
