Aroma’s: In de neus vinden we hints van rozenbottel viooltjes en veel specerijen.
Smaak: Hij is mooi in balans en heeft mooie zachte tannine.
Food pairing: Deze wijn gaat uitstekend samen met rood vlees, wildgerechten, truffelgerechten alsmede bij zachte en harde kazen. Maar zeker kan deze wijn op zichzelf gedronken worden. Er is dus geen eten nodig om hem tot zijn recht te laten komen.
Vinificatie: Op de heuvels bij Alba in de Piemonte ligt wijnhuis Pietro Rinaldi dat al bestaat sinds 1920. Inmiddels heeft Monica Rinaldi het stokje overgenomen en maakt zij zeer verdienstelijke wijnen. En natuurlijk een Barbaresco. En dat bleef niet onvermeld in onder meer de Gambero Rosso met twee rode glaasjes en 94 punten bij de Wine Enthousiast. Het wijnhuis laat het gras bewust lang groeien naast de wijnstokken en maakt geen gebruik van herbiciden. De druiven worden met de hand geplukt, evenals het uitdunnen van het aantal druiven aan de stok. De gaarden bevinden zich in Neive. De San Cristoforo is een single vineyard wat het een speciale cru maakt. Fermentatie in inox en rijping voor 18 maanden op Sloveens eikenhout.
